Cornish Recipes - Fish Tart Cases (NEW)

 

Ingredients:

For Short Pastry:

500g Plain Flour.

125g Butter/Margarine.

1tbsp Water.

For Filling:

1 small Onion.

300ml Milk.

30g Butter.

30g Flour.

500g cooked, White Fish.

Topping:

Handful of Grated Cheese.

Handful of Breadcrumbs.

 

Method:

1. Mix the Flour and Butter and bind together with a little water to make some little short pastry cases. (As you would for jam tarts.)

2. Bake the cases but not too much. 15mins at 200°C should do it. Putting dried beans in the center of each case can stop the pastry from puffing up in the middle, although the beans can not be consumed.

3. Whilst waiting for the pastry to cook and then cook...

4. Chop the onion and cook in the milk till soft.

5. Melt the butter and stir it into the flour, add salt and pepper and then stir in the milk and onion.

6. Once the filling is thick and creamy add the fish, flaked into small pieces.

7. Fill the now cold tart cases with the filling, sprinkle with the cheese and then the bread crumbs.

8. Bake in a hot oven till nicely browned on top. Best served HOT!
