Cornish Recipes - Cornish Heavy Cake
Ingredients:
350g Plain Flour
A Pinch of Salt
175g Lard
75g Caster Sugar
175g Currants
75ml Milk
75ml Water
A Beaten Egg
Method:
1. Pre heat the oven to 160C/325F
2. Mix the flour and salt in large bowl.
3. Rub in the lard.
4. Mix the milk and water and add gradualy to make a stiff dough (not very much liquid).
5. Roll the stiff dough out onto a greased baking tray till about 1cm thick.
6. Brush over the beaten egg. And mark the top with a knife is desired (crisscross ect)
7. Put in the preheated oven for 20 minutes or until golden.
8. Put on a wire rack to cool. Cut into peices to serve.
