Cornish Recipes - Cornish Scones
Scones although origonating from Scotland have become an esantial part of Cornish heritage due to the 'Cream Tea'. Today scones are slightly sweetened or savory. Rasins, cheese and other ingredients can be also added to the basic mix. But a 'cornish cream tea scone' is usualy plain or with rasins.
Ingredients:
225g of Self Raisning flour
A Pinch of Salt
55g of Butter or Margarine
25g Caster sugar
150ml Milk
Method:
1. Preheat the oven to 220C/425F/Gas 7 and prepare a grease baking tray.
2. Mix together the flour, salt and sugar.
3. Rub in the butter or maragaine.
4. Stir in the milk till you get a soft dough
5. (Stir in any rasins or other ingredients.)
6. Lightly scatter flour over a work surface and knead the dough very lightly.
7. Roll the dough with a rolling pin till aproximatly 2.5cm thick.
8. Using a cutter or sharp knife, cut out circular shapes (5cm across).
9. Place the cut out shapes on the preprepared baking tray.
10. Brush the top of the scones with a little milk and bake for about 15 minutes or until risen and golden.
11. Leave them to cool on a wire rack.
To store: Keep in an airtight container
