Cornish Recipes - Strawberry Jam

 

Not a particualrly 'Cornish' recipe. But there is a sence of achivement in serving a totaly home made cornish cream tea!

Ingredients:

( to make 5 Jars) Make sure the jars you use are clean and sterilsed. ( Wash them in soapy water and dry off in a hot oven placed upside down)

1kg Strawberries
1kg Granulated sugar
½ the juice from a Lemon
A Small Knob of Butter

Method:

1. Take out the center and half all strawberries the day before you wish to make the jam.

2. Next put into a bowl with half of the sugar and coat throughly and place in the fridge over night.

3. Pour the whole contence of the bowl into a very large pan, add the remaining sugar and lemon juice.

4. Stir over a low heat until all of the sugar has disolved.

5. Bring the pan to the boil - and keep boiling until the setting point has been reached.

6. When the setting point has been reached, turn the heat off, stir in the butter and skim off any 'scum' on the surface with a spoon.

7. Leave to rest for 10 minutes.

8. Take your presterilised jars, and spoon the jam into each of the jars.

9. Cover with the lid whilst still hot and keep in the refigerator.

Note: This is not a long life jam, just enough to enjoy with your scones and clotted cream. Although the jars can be sealed with wax and various other methods, and by doing that the jam can last over a year in some cases!
